Description

These Valentines Love Letter Pastries feature light, flaky pastry filled with sweet strawberry jam. Perfect for celebrating special moments with a homemade touch.


Ingredients

  • Plain Flour (2 cups)
  • Caster Sugar (2 tablespoons)
  • Dairy-Free Block Butter (1 cup, cold)
  • Ice-Water
  • Vegan-Friendly Strawberry Jam (1 jar)
  • Dairy-Free Milk (optional)
  • Icing Sugar (optional)

Instructions

  • Combine the flour and caster sugar in a medium bowl and mix well.
  • Add cold, cubed dairy-free butter, mix until resembling coarse sand.
  • Gradually incorporate ice-cold water until the dough comes together.
  • Wrap the dough in greaseproof paper and chill for 30 minutes.
  • Preheat the oven to 350°F (170°C) and line baking trays with greaseproof paper.
  • Roll out the chilled dough and cut into diamond shapes.
  • Spoon strawberry jam into each diamond and fold corners to seal like an envelope.
  • Brush pastries with dairy-free milk, sprinkle with sugar, and bake for 20-25 minutes until golden.
  • Allow to cool, dust with icing sugar, and serve.

Notes

For flakier pastry, ensure butter is cold before mixing.
Store pastries in an airtight container for 2-3 days at room temperature.
Experiment with different fruit jams for variety.
