Ingredients
- Plain Flour (2 cups)
- Caster Sugar (2 tablespoons)
- Dairy-Free Block Butter (1 cup, cold)
- Ice-Water
- Vegan-Friendly Strawberry Jam (1 jar)
- Dairy-Free Milk (optional)
- Icing Sugar (optional)
Instructions
- Combine the flour and caster sugar in a medium bowl and mix well.
- Add cold, cubed dairy-free butter, mix until resembling coarse sand.
- Gradually incorporate ice-cold water until the dough comes together.
- Wrap the dough in greaseproof paper and chill for 30 minutes.
- Preheat the oven to 350°F (170°C) and line baking trays with greaseproof paper.
- Roll out the chilled dough and cut into diamond shapes.
- Spoon strawberry jam into each diamond and fold corners to seal like an envelope.
- Brush pastries with dairy-free milk, sprinkle with sugar, and bake for 20-25 minutes until golden.
- Allow to cool, dust with icing sugar, and serve.
Notes
For flakier pastry, ensure butter is cold before mixing.
Store pastries in an airtight container for 2-3 days at room temperature.
