  • 1/4 cup (60 ml) whipping cream or heavy cream
  • 4 ounces (112 grams) full-fat cream cheese
  • 1/3 cup (56 grams) white chocolate chopped and melted
  • 1/2 cup (120 grams) plain greek yogurt
  • 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
  • fresh raspberries for garnish, optional

Instructions

  • In a small bowl, use an electric mixer to beat the whipping cream until stiff peaks form, being cautious not to overmix.
  • In another medium bowl, combine cream cheese and melted white chocolate using the same beaters. Mix in Greek yogurt until smooth, then fold in the mashed raspberries.
  • Gently fold in most of the whipped cream, leaving one tablespoon aside for topping. Ensure the mixture remains light and fluffy.
  • Divide the mousse into two serving glasses and serve immediately, or chill for up to eight hours for a softer texture. After chilling, the mousse will have a silkier consistency.
  • Top with the reserved whipped cream and garnish with additional raspberries, if desired.

Notes

This mousse can be made ahead of time and stored in the refrigerator for up to 8 hours before serving.
For a lighter texture, be gentle when folding in the whipped cream.
Using fresh raspberries will provide a vibrant flavor, but frozen ones work well too.
