- 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
- fresh raspberries for garnish, optional
Instructions
- In a small bowl, use an electric mixer to beat the whipping cream until stiff peaks form, being cautious not to overmix.
- In another medium bowl, combine cream cheese and melted white chocolate using the same beaters. Mix in Greek yogurt until smooth, then fold in the mashed raspberries.
- Gently fold in most of the whipped cream, leaving one tablespoon aside for topping. Ensure the mixture remains light and fluffy.
- Divide the mousse into two serving glasses and serve immediately, or chill for up to eight hours for a softer texture. After chilling, the mousse will have a silkier consistency.
- Top with the reserved whipped cream and garnish with additional raspberries, if desired.
Notes
This mousse can be made ahead of time and stored in the refrigerator for up to 8 hours before serving.
For a lighter texture, be gentle when folding in the whipped cream.
Using fresh raspberries will provide a vibrant flavor, but frozen ones work well too.
